The story started in his kitchen ...
Step 1: Learn the art of distillation from zero and create amazing cooking recipes. The whole story began with a world tour of spirits which allowed Calixte to establish a complete cartography of the aromas and flavors he wanted to find in the products of Sober Spirits. Then, Calixte bought a small distiller to be able to learn everything from zero on the art of distillation and thus succeed in creating "homemade" recipes, in his kitchen!
Equipped with pipettes, syringes, a bit of madness and a list of ingredients to test with the still, to taste and compare, Calixte had only one goal: to create the best alcohol -free alternative for alcohol for alcohol for alcohol Cocktails. And we had to be ingenuity ...

From a real spirit to the 0.0 version
Step 2: Break the codes and innovate where no one has ventured! Calixte started from a simple principle: "If we want to create real alternatives to spirits, why not start with real spirits?". Thus, at the heart of the DNA of Sober Spirits was born what was going to make its greatest strength and which differentiated them from all the competitors: alcohol extraction. Take the example of the 0.0%Soberrum, our alcohol -free rum alternative: after a first distillation of a French Caribbean Rum, coming out of a 70 -degree alambic, this rum is imported to Grasse (world capital of perfumes), In the south of France, where the famous alcohol extraction will be made. Extraction is a technique for separating the elements that make up spirits after distillation. It allows, among other things, by heating, a system of pressure and thermal shock, to separate the taste (which we recover for our range of sober spirits 0.0%) and pure ethanol. This extraction is very complex and costly Because we recover very little from the raw material that interests us in the Sober Spirits products after extraction. On the other hand, ethanol is recycled in the high perfume industry.

But we had to go even further in the technique

In addition to what makes Sober Spirits' DNA, Calixte wished to complement by different infusions, maceration or complementary distillations depending on the products in the range in order to bring more bodies, intensity, finesse as well as complexity Additional aromatic thanks to the use of different plants, bark & ​​fruit allowing to appreciate each sip a cocktail experience without compromise. It is only after 2 years of R&D, several hundred distillation tests, the creation and adaptation of new alcohol extraction techniques, infusions and many questions about the technical feasibility that we have succeeded to invent Sober Spirits.

Tradition at the heart of R&D and innovation at the service of taste
Step 4: Adapt the "kitchen" recipe to a high volume recipe.
Our master passionate distiller, with its know-how, is developing today the entire Sober Spirits range according to a secret process that we have set up through dozens of life-size tests before reaching the finished products. This production process lasts several days and calls on almost half a dozen different techniques, the two main ones are the extraction of alcohol and distillation in copper alambics over a century old. Our technical expertise, controlling the duration of the process and heating temperatures as well as the selection of suppliers allow us to exploit all the aromatic potential of raw materials, a key to the success of the range and the Sober Spirits experience.
