The creation of an alcohol-free wine requires technical skills and the experiment. We have chosen the vacuum distillation method, which makes it possible to respect the quality and properties of the initial wine, by performing a distillation at low temperatures.
The first step is to extract highly volatile compounds (aromas) as well as a percentage of alcohol.
In a second step, the wine passes into a second column to evaporate residual alcohol.
Finally, we are assessing alcohol -free wine with the aromatic base to obtain this delicious juice, while preserving the freshness and the fruity dimension characteristics of the white chenin!
