Pneumatic pressing gently.
Our organic and vegan rosé wine constitutes the base of Cypher, which is first of all distilled in cold (30 °) thanks to a distillation column under vacuum atmosphere in order to extract 100% of alcohol without destructuring wine nor give it heating aromas. The aromas contained in alcohol are reintroduced in Cypher through a slight aromatic formulation. At pasteurization, we prefer the reasoned use of an agrifood curator in order to replace the natural conservative that is alcohol.
To be appreciated for its aromatic freshness within 18 months (DLC 4 years old).
Natural residual sugars (no addition on our part): 23 mg / liter
